Yemenite tripe (tripe recipe from Yemen) |

Ingredients1 kilogram of tripe 2 cups water 2 large onions, chopped Extravirgin olive oil, 1 cup 2 large tomatoes, chopped Cardamom, 1 pinch Coriander, 1 pinch Cumin, 1 pinch Turmeric, 1 pinch Cayenne pepper, 1 pinch Black pepper, 1 pinch Salt to taste |
DirectionsCut the tripe into squares of approximately 5 centimeters. Boil it for a few minutes in salted water. In the meantime sautee the onions and the tomatoes in the olive oil. Drain and add the tripe. Simmer for approximately one hour, then add the remaining ingredients and continue to cook for another hour until the tripe will be tender. |
